❀ Healthy and Quick
I am always struggling to find ways to eat food that is both good for me and quick to prepare. Throw in a desire to eat something locally, and I have no idea how to begin. I love the fact that Weidemann takes the guilt out of what and how I eat through her easy and down-to-earth approach to cooking.
❀ Lots of Recipes to Choose From
There are so many more recipes that I look forward to creating, that I think I have bookmarked every single page in this one! However, I narrowed it down to a few things to try for my review and every single recipe was quick and flavourful. The Banana Cardamom Oatmeal is one that I have actually made a few times, and if you are a fan of morning oatmeal, this is one that should be on your radar. It is cooked with coconut milk and the addition of cardamom, banana, and pistachios give it a yummy and rich flavour that is so perfect for kicking off the day.
❀ Filling Meals for Busy Days
Soups have always been a weeknight staple for me, as they are typically simple to prepare and provide a filling meal on a busy day. The Thai Coconut Cauliflower Soup in this cookbook is absolutely incredible, and it has so much flavour that comes simply from the addition of red curry paste. It is a must try if you plan on making anything from this book.
Last night, I made the enchiladas and I was surprised at how quickly they were to assemble. A rotisserie chicken makes the task so much easier that I am planning on using this tip more often. Unfortunately, I forgot to take a photo, they are that amazingly distracting!

I frequently roast a whole chicken and have plenty for delicious meals during the week. Very quick ones. Sounds like the book has lots of good tips for those rushed, busy working people who don’t want junk food.
I think that taking the approach you just described is another way of looking at it. Sometimes investing time into one meal can create many more.

You seem to find good things here. However — When reviewers get books for free I always wish they would compare the free one to other similar books. A buyer has so many choices. So I wonder, would the reviewer spend real money for this book? Or did the reviewer just enjoy it because it was there.

I typically only choose books to review that are of interest to me and sometimes they are hits and other times they are misses. This book definitely is one that I feel deserves all of the accolades. Also, I have often purchased books that I have read for review for myself and others as gifts.
My husband and I are always talking about trying to eat healthy but not even knowing where to start. Recipes, menus, what to buy, what NOT to buy… this sounds like an awesome way to get started, and not take up too much time.
Exactly my dilemma! I want to eat healthy, but time just doesn’t allow for it. Any ideas or solutions to make it happen are a bonus.

Thai Cocounut Cauliflower Soup sounds delicious. I don’t like cauliflower so this my be the recipe to get me to eat more of it.
I find that when cauliflower is incorporated into soups and other dishes, it is less noticeable. I hope that you enjoy it if you do try it. 🙂

I make my own muesli & eat with my own yoghurt & fruit. I’ll try it with cardamom tomorrow!
